As I begin to write this post the tune from Alice In Wonderland is going through my head…, “I’m late, I’m late, for a very important date…”. The plan was to write this post on Sunday, then Monday, then Tuesday and here we are on Wednesday night. Life has taken us by storm this week and any official plans I have attempted to make have all been trumped by some other more urgent matter. While this is going on I have this little voice in my head screaming, “Next week in Thanks Giving!!!!”. And if you are wondering, no, I am not ready.

So with all that has been going on it’s no surprise I have been craving comfort food. The kind of comfort food that pairs well with milk, coffee, tea, the TV remote and a cozy warm blanket. These Spiced Oatmeal Cream Cheese Sandwiches fit the bill. Warm Fall spices, comforting oatmeal, plump sweet raisins and smooth creamy cream cheese filling give comfort all around and as rich as they are you will find yourself wanting another.
The magic part of this sandwich cookie is that the cookie is chewy. So when you take bite your going to taste all the wonderfully warm spices of cinnamon, nutmeg, cloves and ginger as the cookie continues to soften into the cream cheese filling as if they were always meant to be together and should never be apart again.
So what helped make these cookies just a little more chewy? Molasses, you know the dark syrupy stuff you might hear your grandmother talk about. Or more commonly known as the brown in brown sugar. Molasses has a robust flavor that pairs really beautifully with the spices and sweet raisins.

So lets talk about our cream cheese filling. I have made cakes, cupcakes and cookies for years and one thing is for certain, almost everyone loves cream cheese icing/frosting/filling. It’s deceiving because it looks like a buttercream frosting but it has the tang of cream cheese. So the sweetness is tamed which makes you want more! It’s an excellent balance of sweet and tangy! So a little cream cheese, a little butter, vanilla and powdered sugar and voila, the best filling for these cookies imaginable.
Now when these baked up the edges were a darker brown than I am used to. As they cooled the whole cookie turned this beautiful dark golden brown (thanks in part to the molasses). The house smelled like heaven, seriously there isn’t an air freshener on the market that can compare to these spices baking!

Spiced Oatmeal Cream Cheese Sandwiches
Ingredients
- SPICED OATMEAL COOKIES:
- 1/2 cup butter melted
- 1 large egg
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 Tbsp molasses
- 2 tsp vanilla
- 3/4 cup all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp dried ginger
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- 1/4 tsp salt
- 1/2 cup raisins
- 2 cups rolled oats
- CREAM CHEESE FILLING:
- 8 oz cream cheese
- 2 Tbsp butter
- 2 tsp vanilla
- 1 cup powdered sugar
Instructions
- Pre-heat oven to 350 degrees F
- Line cookie sheets with parchment paper
- SPICED OATMEAL COOKIES:
- In large mixing bowl add sugars, egg, vanilla and molasses.
- With mixer on low, slowly stream in melted butter.
- Turn mixer to medium and mix until well combined.
- In large bowl add flour, baking soda, spices, and salt, stir to mix well.
- With mixer on low slowly add the flour mixture until all added.
- Mix until dough is formed.
- Add in oats and mix until combined.
- By hand fold in the raisins until well combined.
- Spoon cookies onto cookie sheet.
- Bake 8-9 minutes or until golden brown on the edges.
- While first batch is baking put dough in refrigerator, dough is soft and should not get too warm.
- Repeat until all cookies are baked.
- Let cool completely.
- CREAM CHEESE FILLING:
- Place cream cheese, butter and vanilla into mixing bowl.
- Mix on medium until smooth and well combined.
- Slowly add in the powdered sugar in small additions.
- Mix until well combined and smooth and creamy.
- ASSEMBLY:
- Pair up cookies by size.
- Put a generous dollop of filling on inside of cookie and spread evenly with offset spatula or knife.
- Sandwich cookies together. Press gently as to not break the cookie.
- Repeat until all sandwiches are made.
- Store in airtight container.
