Pre-heat oven to 350 degrees F
Line cookie sheets with parchment paper
SPICED OATMEAL COOKIES:
In large mixing bowl add sugars, egg, vanilla and molasses.
With mixer on low, slowly stream in melted butter.
Turn mixer to medium and mix until well combined.
In large bowl add flour, baking soda, spices, and salt, stir to mix well.
With mixer on low slowly add the flour mixture until all added.
Mix until dough is formed.
Add in oats and mix until combined.
By hand fold in the raisins until well combined.
Spoon cookies onto cookie sheet.
Bake 8-9 minutes or until golden brown on the edges.
While first batch is baking put dough in refrigerator, dough is soft and should not get too warm.
Repeat until all cookies are baked.
Let cool completely.
CREAM CHEESE FILLING:
Place cream cheese, butter and vanilla into mixing bowl.
Mix on medium until smooth and well combined.
Slowly add in the powdered sugar in small additions.
Mix until well combined and smooth and creamy.
Pair up cookies by size.
Put a generous dollop of filling on inside of cookie and spread evenly with offset spatula or knife.
Sandwich cookies together. Press gently as to not break the cookie.
Repeat until all sandwiches are made.
Store in airtight container.
