My Favorite Gluten Free Snacks. Three delicious options for snacking without the gluten.

I have been pondering how to approach this post. I have written, deleted, written, deleted and so on. So here it is, the truth I am trying to sugar coat, give me a second here…. My fall clothes are too tight on me, they don’t fit period. Somewhere this summer I decided to go all crazy with the eating and BAM! 10 lbs later I need a whole new wardrobe. I can honestly say I didn’t see it coming because as odd as it may sound my summer clothes never got tight, lol. So here I am…
I started a program (Weight Watchers, the original points program this has always worked well for me) and started working out. Week 1 I was on a high because I was excited for the new lifestyle change. Week 2 I was coasting along proud I had even made it to week 2, lol. But week 3, ouch, my cravings are at their worst and I really just want to be able to eat the left over mac and cheese on my daughters plate without having to “count it” because it shouldn’t count if it wasn’t mine to begin with right? Because of this state of mind I almost didn’t post this week because I knew if I made something delectable that I would give in. But then a light bulb went off, “why not post the snacks that have saved you this week?” And here I am doing just that.
I have three snacks that have ultimately saved me from despair and from blowing 2 weeks of hard work. They are gluten free because I am off setting the taste testing days for the blog. Whether my craving is crunchy, sweet, a little salty or creamy one of these has hit the spot.
The first one you saw above is my 3 Ingredient Strawberry Sorbet. This hits the spot when I am craving ice cream or a soda. It’s done in 30 seconds and I’m in heaven. 1 cup frozen strawberries, one squeeze lemon juice and Stevia to taste. Stevia is an all natural sweetener from the Stevia leaf. Stevia is sugar free, calorie free and has no ill side effects like artificial sweeteners. Don’t discount the squeeze of lemon, it really enhances the strawberry flavor.
My next love this week, Skinny Pop popcorn, www.skinnypop.com/our-popcorn. At night I crave salty snacks while I am watching TV. Last week I was all about the Original flavor and this week I am all about the White Cheddar. There are no artificial ingredients, its super crunchy and popcorn is always filling. One of the reasons I love this one is I just open then bag, measure out my portion and done, nothing to make.
Last but not least. Caramel drizzled apples. Now I love apple desserts boy do I. But just apples, well their just ok, they don’t hit the spot. However, sweet, tart, crunchy apples drizzled with caramel now we are talking. It doesn’t take much caramel to make an ordinary apple extraordinary, I only use a 1/2 Tbsp. Now let me be clear, that 1/2 Tbsp of caramel never touches the plate and it is expertly divided up between the apple slices so I can get a taste of caramel with each bite of apple.
Whether you are living a gluten free lifestyle, taking a break or just trying to limit how much gluten you eat these snacks are delicious!

Ingredients
- 3 INGREDIENT STRAWBERRY SORBET:
- 1 cup frozen strawberries
- 1/4 cup water
- 1 squeeze fresh lemon juice
- Stevia to taste
- CARAMEL DRIZZLED APPLES:
- 1 apple of your choice cut into slices
- 1/2 Tbsp of gluten free caramel
Instructions
- INGREDIENT STRAWBERRY SORBET:
- Put all ingredients in blender and and blend until smooth.
- Depending on your blender you may need more water.
- CARAMEL DRIZZLED APPLES:
- Arrange sliced apples on a plate.
- Carefully drizzle caramel on each slice.

Omg, I think we have all been subject to those few unwanted pounds at some point in our lives.. and they ALWAYS just sneak up on you like some joke got wrong. I feel your pain! And I had to laugh out loud and completely agree with the fact that food shouldn’t count if it wasn’t yours to begin with! <– LOVE THAT! Anyways, all these snacks look delicious!
