Ingredients Method

Ingredients
  

  • CAKE:
  • 2 cups all purpose flour
  • 2 Tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 cup butter
  • 1 egg slightly beaten
  • 1/2 cup milk
  • 1 cup fresh blueberries
  • 3 Tbsp sparkling sugar crystals if you don't have the larger granules granulated sugar will work
  • GLAZE:
  • 2 cups powdered sugar
  • 3 Tbsp milk
  • 2 tsp almond extract

Method
 

  1. Preheat oven ot 400 degrees F
  2. Oil an 8 inch cake pan set aside
  3. Sift together the flour and baking powered.
  4. Cut in the butter.
  5. Combine egg and milk.
  6. Stir into flour mixture.
  7. Divide dough in half.
  8. Gently pat half the dough into prepared pan.
  9. Top with blueberries.
  10. Roll out the remaining dough into 8" circle, cover the blueberries with it.
  11. Sprinkle with sparkling sugar crystals.
  12. Bake 25-30 minutes until golden brown.
  13. GLAZE:
  14. Mix all ingredients together.
  15. Pour onto cake.
  16. Server warm.
